CLEANINGINPLACE(CIP)(就地清洗)1.WhatisCIP?Asweknow,hygieneconsiderationsareofutmostimportanceinthefoodmanufacturingprocess,socleaningisconsideredasanintegralpartoffoodproduction.1.WhatisCIP?Inclosedequipmentconsistingofpipesystems、tanks、processapparatus,andsoon.Thesinglestepofthecleaningprocedurecanbecarriedoutbypumpingthedifferentcleaningsolutionsthroughtheequipment.Theequipmentintheproductionlineneednottobetakenapart.2.ThreetypesinCIPsystems.single-useCIPsystems(单次使用的CIP系统)reuseCIPsystems(重复使用的CIP系统)multi-useCIPsystems(多次使用的CIP系统)2.ThreetypesinCIPsystems.InCIPsystems,thesolutionsareusedonlyonceinthesingle-useCIPsystem;Ifthesolutionsarerecoveredandstored,itisthereuseCIPsystem;andthemulti-useCIPisacombinationofbothsystems.2.1single-useCIPsystems2.1single-useCIPsystemsAdvantages:lowerinvestmentshorterfeedingpipelineDisadvantages:higherrunningcost2.2ReuseCIPsystem2.2ReuseCIPsystem2.2ReuseCIPsystemAdvantages:lowerrunningcostBetterpersonalsafetyDisadvantages:higherinvestmentlongpipeworkforsupplyandreturnhastobeinstalled2.3multi-useCIPsystemThesedisadvantagesofsingle-useandreuseCIPsystemscanbeovercomebytheuseofdecentralizedmultiuseCIPsystemsinwhichlocalsmallstandardunitsareplacedclosetogroupsofequipmenttobecleaned,buttheyarefedwithdetergentsfromacentrallyplacedstorageunit.AfterhavingbeenusedinthelocalmultiuseCIPunit,thedetergentisreturnedtostorage.2.3multi-useCIPsystem3.CIPprocedurewaterwash→basewash→waterwash→acidcleaning→waterwashWaterwash:whenabouttofinishconveyingmaterials,thewaterwashstarts.Thepurposeistodischargeremainders.whenwaterflownfromequipmentbecomesclean,endthisprocedure.3.CIPprocedureBasewash:Makingup2%NaOHinthelyetank,then2%NaOHheatedto80℃bytheplateheatexchanger(PHE)flowsthroughtheequipmentabout30min.Theaimistosoluteproteinandmilkfat.Waterwash:afterthelyeisdischarged,cleantheequipmentwithwaterabout15min.Acidcleaning:Makingup2%HNO3inthepicklingtank,then2%HNO3heatedto80℃byPHEcirculatesinequipmentabout30min.Waterwash:Aftertheacidisdischarged,cleantheequipmentwithwaterabout15min.4.DetergentsTheprocessofsoildetachmentisrathercomplexinnature,whichmeansthatthereisnosinglechemicalcompoundabletoperformeachstepperfectly.Inpractice,ablenddetergentswillbeused,madeofthefollowingcomponents:4.Detergents(1)Alkalies:sodiumhydroxide,Na-carbonate,Na-hydrogencarbonate,andtrisodiumphosphatearethemaincomponentstodetachorganicsoilsuchasprotein,carbohydrates,andfat.(2)Acid:nitric,phosphoric,sulfamic,hydroxyacetic,glucomic,citric,lacticareusedtocleansurfacesfrominorganicsoil.4.Detergents(3)Complexingandsequesteringagents:orthophosphatespolyphosphates,anditssalts,andglucomicacidanditssaltswillbindcalciumandmagnesiumionsinthesolution,avoidingdepositsonthesurfaces,andwilllooseanddispersethesoil.(4)Surface-activeagents:anionicsurfactants,andnonionicsurfactantsareusedtoeliminatefattysoilswhicharenotsolubleinwater.4.Detergents(5)Othercomponents:suspendingagents,corrosioninhibitors,antifoamingagents,andenzymesareotherpartsofmoderntailormadecleaner.5.CIPcircuitThedecentralizedmultiuseCIPsystemisavolume-controlledCIPunitincorporatingabatchtanktowhichcleaningmediaisadded.Thevolumeofeachcleaningmediacorrespondstotherequiredvolumeofeachcleaningcircuit.Thebatchofcleaningmediaispumpedthroughaplateheatexchanger,whereitisheatedandthencirculatedthroughthisshortcleaningcircuitatahighflowrateupto50000L/h.5.CIPcircuitWhencleaningpipelines,thebatchtankisusedasaheader.Ifthecapacityofbatchtankisinsufficient,liquidisaddedtoitwhilethecircuitisbeingfilled.6.CIPequipmentThemultiuseCIPunitisdesignedforcleaninginplace(CIP)oftanksandpipelines.Itworkswithautomaticallycontrolledprogramscomprisingdifferentcombinationofcleaningsequences,inwhichwater,lye,acid,andhighlydilutedacidsolution(acidifiedrinse)arecirculatedthroughthecleaningobjectforvaryinglengthsoftimeandatvaryingtemperatures.SummaryWhatisCIP?ThreetypesinCIPsystemsCIPprocedureDetergentsCIPcircuitCIPequipment
