1分类号:I单位代码:104密级:一般学号:1040308014024本科毕业论文(设计)题目:中式菜名英译浅析专业:英语(商务方向)姓名:段媛媛指导教师:张小莉职称:讲师答辩日期:2012年6月2日2ONTHETRANSLATIONOFCHINESEDISHNAMESBYDUANYUANYUANATHESISSUBMITTEDINPARTIALFULFILLMENTOFTHEREQUIREMENTSFORTHEDEGREEOFBACHELOROFARTSTOTHESCHOOLOFFOREIGNLANGUAGESYAN’ANUNIVERSITYJUNE20123AcknowledgementsThispaperwouldnothavebeencompletedwithoutthehelpofmysupervisor,Mrs.Zhang,whohasdevotedherprecioustimetoguidemeonmyeachwritingstage.Ireallyappreciatehersupportandguidance.Then,Ioffermyregardsandblessingstoallofthosewhosupportedmeinanyrespectduringthecompletionofthepaper.Andfinally,Iwouldliketooffermysinceregratitudetomydearfriendswhospentmuchtimewithmeonmythesisandgavemeadvicesandsupports.4AbstractCulinaryartisanimportantpartofanation’sculturalconnotation.SinceChina’sreformandopeningup,theinteractionamongpeoplesofdifferentnationsisbecomingincreasinglyclose,Chinesecateringcultureiswidelyspreadallovertheworld.Inaddition,withChina’saccessiontoWTOandthedevelopmentoftheGlobalization,Chinesedishnames,asawindowofChinesecateringculture,areactuallyaneffectivemeanstoinformforeignersofChina’sspecialculturalenvironment.Therefore,itisveryurgentandnecessarytotranslateChinesedishnamesintoEnglish.However,theforeignershavesomedifficultiestoknowandacceptChinesedishesconnotationduetolanguage,culturalbackgroundandsoon.Therefore,totranslateChinesedishesintoEnglishisessentialforcarryingforwardourChinesecateringculture.ThisessaydiscussesthecurrentsituationoftheEnglishtranslationofChinesecuisinesandsevenpracticaltranslationmethodsofChinesedishesnames.TheauthoralsoanalyzesthereasonswhyitishardtotranslateChinesedishesintoEnglishandalsoputsforwardafewsuggestionsonhowtotranslateChinesedisheswhilekeepingtheiroriginalfeatures.Keywords:translationmethods;cateringculture;Chinesedishnames;Culturalconnotation5摘要饮食艺术是一个国家文化内涵的重要组成部分,改革开放以来,我国与世界各国的联系日益紧密,中国的饮食文化在全世界得到广泛传播。另外,随着我国加入世贸组织和全球化的不断发展,中国菜已成为越来越多国际友人了解中国的一个重要窗口,扮演着重要角色。但是,由于语言,文化背景等方面限制了外国人对中国菜的了解与接受,因此,将中国菜翻译成英语,将中国饮食发扬光大是非常重要的。本文介绍了中式菜名英译的现状,并结合实例归纳提出了七种具体实用的菜肴名称的翻译方法,分析了中式菜名英译难的原因并且提出了翻译好中式菜名的几点建议。关键词:翻译方法;饮食文化;中国菜名;文化底蕴6IntroductionChinaisacountrywithprofoundculinaryart.TheChineseareparticularaboutculinaryartsinceancienttimes.Todate,Chinesecuisinehasbeendevelopingforfourorfivethousandyears,itssuperbculinaryartandrichculturalconnotationmakeitthefirstclasscuisineintheworld.InChina,peoplealwayssay“peopleregardfoodastheirprimewant,andfoodsafetyshouldbegiventhetoppriority”.Therefore,wecanseepeopleregardfoodasthefirstthingtoconcernintheirdailylife,andcookingcultureisaveryimportantpartintraditionalChineseculture.WithChina’senteringintotheWorldTradeOrganization,2008OlympicGamesholdinginBeijingandtheboomingoftourismindustry,Chinahasattractedmoreandmoreforeigntravelers.Astheyfeastthebreath-takingsceneryofChina,theymustdesperatelywanttoenjoydeliciousChinesefoodforChinesecuisinehaslongenjoyedareputationofdelicate,extravagantfoodthroughouttheworld.However,thereareproblemsarise.WithChinesecharactersofintelligenceandhumorinit,thenameoftheChinesedishishardunderstoodbytheforeigners.Forinstance,“金玉满堂”(AssortedBarbecuedMeatplatterwithportionofsucklingpigorcrispyBarbecuedsucklingpig),“龙凤呈祥”(phoenixes&dragonsdancing)(zhu,1992;286)andsoon.So,wecanseefromtheabove,totranslateChineseCuisinesintoEnglishproperlyandmakeiteasilyunderstoodbytheforeignersisveryimportantandurgent,ifwecantranslateitwellenough,wewillsurelydosomecontributiontoourcountry’stouristindustry,andevenmakeChineseCuisineandcultureshiningintheworld.7Manyscholars,indictionariesorarticles,havemadeeffortsondish-nametranslation.ThesestudiesonlylisttheChinese-Englishtranslationofdishname.It’snotsystematic.ThispaperisfocusedonsystematicresearchofChinesedishnames.SummarizesseventranslationmethodsofChinesedishnameandputsforwardseveralsuggestionsonitsname.Ingeneral,thispapercanbedividedintofourparts:Inthefirstpart,theauthorintroducesthecurrentsituationandthenecessitytotranslateChinesecuisineintoEnglish;Inthesecondpart,difficultiesintranslatingtheChinesedishesintoEnglishisraisedandinthethirdpart,severaltranslationmethodsofChinesedishnamesislistedaimstodealswiththeprevioustranslationproblems.Atlast,inordertotranslateChinesedishnamescorrectlyaswellaswithChinesecultureinit,theauthorputsforwardseveraltranslationprinciplestofollow.81.ThenecessityandcurrentsituationofChinesecuisinetranslation1.1ThenecessityofChinesecuisinetranslationChineseCookinghasalonghistoryandisfamousallovertheworldforitsrichflavoranddelightfulcolorings.ChinesedishesnamesareespeciallyfullofintelligenceandhumoroftheChinesepeople.However,becauseofregionrestriction,language,culturalbackgroundandsoon,itisnoteasyfortheforeignerstoknowandaccepttheconnotationofourdishes,soitisveryimportanttotranslateChinesecuisinenamesaccuratelyandvividlytomakeforeignfriendsunderstoodtheartandculturalconnotationofthenamesofdisheswhiletastingtheuniqueflavorofChinesedishes.Sincethe2008OlympicGamesheldinChina,itisveryobviousthatmoreandmoreforeigntravelerschooseChinatobetheirdestination.Hence,totranslateChinesedishesi
