January2003QualitySystemsAuditPage1Yum!BrandsGLOBALRESTAURANTS,INC.(A&W,KFC,LongJohnSilver’s,PizzaHut,andTacoBell)QUALITYSYSTEMSASSESSMENTGUIDELINES2006versionTheseGuidelinesareforusewithYum!BrandsQualitySystemsAssessmentandinSupplierApprovalEvaluations.ItemsinBOLDPRINTareAutomaticFailuresforNopointscategories.Thoseelementsnotapplicabletothesuppliershallbedesignatedasn/aonthescoresheet.EachquestionscoringanAutomaticFailureorNoPointsscoreistohaveacorrectiveactioninsertedintotheActionPlansectionofthescoresheet.Theactionplanistobecompletedwiththesupplier'sinput.Ifasupplier'sprocessorproductmakesitimpossibletomeetstandardsexactlyaswritten,thesuppliermayrequestaLetterofVariancefromYum!Brands.ALetterofVarianceisissuedonlyunderextremecircumstances,andonlyiftheYum!BrandsQAdepartmentagreesavarianceiswarranted.ThedocumentshallbesignedbyappropriateYum!BrandsQAcontactthenforwardedtothesupplier.AllLettersofVariancemustbemaintainedonfileatthesupplierandupdatedataminimumofannually.Variancesreceivedthedayoftheassessmentwillnotcountforthecurrentassessment,butwillbeincludedinfutureassessments.Yum!BrandsGlobalRestaurantsreservestherighttofollow-uponallcorrectiveactionsnotedintheQualitySystemsAssessment.Pointsnotedinparenthesis-ex:(10points)-representpointsearned.(*)-Questionsdesignatedwithanasteriskmaybescoredn/aforfirsttimeauditsonly.AssessmentSections:Categorymeansthesectiontobeassessed(ex:1.0,2.0,etc.)Elementisthespecificbulletedrequirementwithinthecategory(ex:1.1,1.2,etc.).Criteriaistheexplanationofeachauditpoint.Forthepurposesofthisassessment:singleoccurrence==referstooneinstanceisolatedoccurrences==referstotwoorthreeinstancesnumerousoccurrences==referstomorethanthreeinstancesuptosystematicsystematicfailure==referstorepeatedinstancesofnumerousoccurrencesoverseveraldaysmaintained==meanskeptup-to-dateandonfileatthefacilityestablished==meanswrittenandimplementedprogram/procedures==referstowrittenmethods,techniques,practices,policies,etc.documentation==referstoestablisheddocumentssuppliedtoverifyGuidelinerequirements.records==refertotheactualdatacollectedandmaintained,basedonthecriteriaoutlinedintheprocedures.Auditoristoreviewbetween1%and10%January2003QualitySystemsAuditPage2ofrecordssincethelastassessment,enoughtogetarepresentativesample.Ifissuesarefound,anadditionalsampleofrecordsshouldbereviewedtodetermineiftheissueisisolatedorreoccurring.Allrecordcorrectionsshallbesinglelinedout(sothatthecorrectioncanstillberead)andinitialed.White-outshallnotbeusedincorrectingrecords.analyticaltests==referstothechemical,microbiologicalorinstrumentalphysicaltestingusedtoverifycompliancetospecification.ThesetestscanbeperformedbyQA,manufacturingorthelaboratory.Incertainsituations,multiplequestionsmaybemarkedforthesamefinding.TheYum!Brandsrepresentativeshallusetheirjudgmentandrecordthefindingunderthemostappropriateauditpoint.Circumstances,however,maywarranttheYum!Brandsrepresentativetomarkdowntheissueinmultiplelocations.Itisimportanttounderstandthatlocallawsandpracticesmaydifferfromcertainguidelines.Inallcases,themorecompleteorrestrictivewillprevail.ItisimportanttheYum!Brandsrepresentativerealizethesedifferencesandevaluatethesupplieraccordingly.__________________________________________________________________QualitySystemsAssessmentGuidelines1.0PRODUCTQUALITY1.1(*)Conformancetospecification/formulationismeasuredatthesamplesize,frequencyandbythemethodindicatedintheYum!BrandsProductQualityAssuranceProgram.(Records)Allpoints(15points):TheinspectionmethodsandfrequenciesoutlinedintheYum!BrandsProductQualityAssuranceProgramandspecificationsaremeasuredasdefined.AnyvariancetoYum!BrandsQualityAssuranceProgramorspecificationrequirementsshallrequireaLetterofVariancefromtheappropriateYum!BrandsQualitycontact.EverypointintheQualityAssuranceProgramshouldhaveanassociatedrecordtoverifythattherequirementwasmet.Thefollowingwillconstitutefullpoints:•recordsareconsistentwithmethodsandfrequenciesinYum!BrandsQAP•supplier-developedqualityprogramswerepre-approvedinwritingbytheappropriateYum!BrandsQAcontactandinclude:Yum!BrandsspecificationKPIsintheroutinequalitymonitoring.Reviewaminimumof1%ofrecordssincelastQualitySystemsAssessment.Ifissuesarefound,additionalrecordsshallbereviewed.TheQualityAssuranceProgram(s)shouldbeusedwhilereviewingrecordstoverifycompliancetorequirements.Minornon-conformance(10points):Oneofthefollowingwillconstituteaminornon-conformance:•correctandcurrentmethodsused,butisolatedinstancesofmissedinspectionsortimingsareobservedJanuary2003QualitySystemsAuditPage3•onequalitycontrolpointisnotmonitoredattheprescribedfrequencyorbythepropermethodwithoutaLetterofVarianceMajornon-conformance(5points):Oneofthefollowingwillconstituteamajornon-conformance:•thecorrectmethodsarebeingused,buttherearenumerousinstancesofmissedinspectionsortimings•twoqualitycontrolpointsarenotmonitoredattheprescribedfrequencyorbythepropermethodwithoutaletterofVariance•recordscontainnumerousomissions•thesamplesizehasbeenreducedwithoutaLetterofVariance•onequalitycontrolpoi
