STANDARDFORQUICKFROZENBILBERRIESCXS76-1981*Adoptedin1981.Amendedin2019.*FormerlyCAC/RS76-1976.CXS76-198121.SCOPEThisStandardshallapplytoquickfrozenbilberriesofthespeciesVacciniummyrtillusL.asdefinedbelowandofferedfordirectconsumption,withoutfurtherprocessing,exceptforrepacking,ifrequired.Itdoesnotapplytotheproductwhenindicatedasintendedforfurtherprocessingorforotherindustrialpurposesnortotheproductcoveredbythespecialstandardforquickfrozenblueberries.2.DESCRIPTION2.1ProductDefinitionQuickfrozenbilberriesistheproductpreparedfromfresh,clean,sound,ripebilberriesoffirmtextureconformingtothecharacteristicsofVacciniummyrtillusL.withorwithoutadrysugarorasyrupandispackagedandfrozeninanappropriatemanner.2.2ProcessDefinitionQuickfrozenbilberriesistheproductsubjectedtoafreezingprocessinappropriateequipmentandcomplyingwiththeconditionslaiddownhereafter.Thisfreezingoperationshallbecarriedoutinsuchawaythattherangeoftemperatureofmaximumcrystallizationispassedquickly.Thequickfreezingprocessshallnotberegardedascompleteunlessanduntiltheproducttemperaturehasreached-18C(0F)atthethermalcentreafterthermalstabilization.Therecognizedpracticeofrepackingquickfrozenproductsundercontrolledconditionsispermitted.2.3HandlingPracticeTheproductshallbehandledundersuchconditionsaswillmaintainthequalityduringtransportation,storageanddistributionuptoandincludingthetimeoffinalsale.Itisrecommendedthatduringstorage,transportation,distributionandretail,theproductbehandledinaccordancewiththeprovisionsintheCodeofPracticefortheProcessingandHandlingofQuickFrozenFoods(CXC8-1976).2.4PresentationStyleQuickfrozenbilberriesmaybepresentedasfree-flowing(i.e.asindividualberriesnotadheringtooneanother)ornonfree-flowing(i.e.asasolidblock).3.ESSENTIALCOMPOSITIONANDQUALITYFACTORS3.1OptionalIngredientsSugars(sucrose,invertsugar,invertsugarsyrup,dextrose,fructose,glucosesyrup,driedglucosesyrup).3.2Composition3.2.1BilberriespreparedwithdrysugarsThetotalsolublesolidscontentoftheliquidextractedfromthethawed,comminutedsampleshallbenotmorethan35%m/mnorlessthan18%m/m,expressedassucrose,asdeterminedbyrefractometerat20C.3.2.2BilberriespreparedwithsyrupTheamountofsyrupusedshallbenotmorethanthatrequiredtocovertheberriesandfillthespacesbetweenthem.Thetotalsolublesolidscontentoftheliquidextractedfromthethawed,comminutedsampleshallbenotmorethan25%norlessthan15%m/m,expressedassucrose,asdeterminedbyrefractometerat20C.3.2.3DefinitionofDefectiveforCompositionAnysampleunitthatfallsoutsidethelimitsforthesolublesolidsrangespecifiedin3.2.1and3.2.2shallberegardedasadefectiveprovideditdoesnotexceedthelimitsoftherangebymorethan5%m/msolublesolids.3.2.4LotAcceptanceforCompositionAlotisconsideredacceptableforcompositionalcriteriawhenthenumberofdefectives,asdefinedin3.2.3doesnotexceedtheacceptancenumber(c)ofanappropriatesamplingplanwithanAQLof6.5.(SeerelevantCodextextsonmethodsofanalysisandsampling).CXS76-198133.3QualityFactors3.3.1GeneralRequirementsQuickfrozenbilberriesshallbe:(a)ofsimilarvarietalcharacteristics;(b)ofgoodcolour;(c)freefromforeignflavourandodour;(d)clean,soundandpracticallyfreefrommouldandotherharmlessforeignmatter;andwithrespecttovisualorotherdefectssubjecttoatolerance,shallbe:(e)practicallyfreefromsandandgrit;(f)whenpresentedasfree-flowing,practicallyfreefromberriesadheringonetoanotherandwhichcannotbeeasilyseparatedbyhandwithoutdamagewheninthefrozenstate;(g)practicallyfreefromextraneousvegetablematter(E.V.M.);(h)reasonablyfreefromcapstems(stalks);(i)practicallyfreefromgreenberries;(j)practicallyfreefromdissimilarvarietiesofedibleberriesotherthanbilberries;(k)reasonablyfreefromblemishedberries;(l)reasonablyfreefromundevelopedormummifiedberries.3.3.2AnalyticalRequirementsMineralimpuritiessuchassand,gritandsiltshallbenotmorethan0.05%m/monthewholeproduct(berriesandpackingmedium,ifany).3.3.3Free-FlowingCharacteristicsWhenpresentedasfree-flowingatoleranceof10%m/mshallbeallowedforberrieswhicharestucktogetherandnoteasilyseparatedinthefrozenstate.Thesampleunitforfree-flowingistheentirecontentsofthecontaineroraslargeaquantityaspracticable.3.3.4DefinitionsforVisualDefects(a)ExtraneousVegetableMatter(E.V.M.)-meansleavesorportionsofthebilberryplant,orothersimilarvegetablematerialwhichisharmless;(b)CapStems(Stalks)-meanstheimmediatestemthatattachesthebilberrytotheplant,whetherornotattachedtotheberry,andwhichis2mm,orgreaterinlength;(c)GreenBerries-meanscompletelyuncolouredberriesorberriesthathaveagreencastthatpredominatesoverthenormalreddishpurplecolourofbilberries;(d)DissimilarVarieties-meansotheredibleberriesthataredistinctlydifferentincolourorshape,whichhavedefinitelydifferentinternalcharacteristicsthanbilberries;(e)Blemished-meansbilberrieswhichshowvisiblesignsofdamagebyinsectsorbypathologicalinjury;(f)UndevelopedorMummified-meansberriesthatarebadlyshrivelled,dried,orhard.3.3.5StandardSampleSizeThesamplesizeforevaluatingvisualdefects,includingapplicationoftolerances,is300grammesofdrainedberries(seerelevantCodextextsonmethodsofanalysisandsampling).3.3.6TolerancesforVisualDefectsBas
