STANDARDFORQUICKFROZENBLUEBERRIESCXS103-1981*Adoptedin1981.Amendedin2019.*FormerlyCAC/RS103-1978.CXS103-198121.SCOPEThisStandardshallapplytoquickfrozenblueberriesofthespeciesVacciniumcorymbosumL.1,2,VacciniumangustifoliumAIT.3andVacciniumasheiREADE,4,asdefinedbelowandofferedfordirectconsumptionwithoutfurtherprocessing,exceptforrepacking,ifrequired.Itdoesnotapplytotheproductwhenindicatedasintendedforfurtherprocessingorforotherindustrialpurposes,nortothebilberries5ascoveredbytheStandardforQuickFrozenBilberries(CXS76-1981).2.DESCRIPTION2.1ProductDefinitionQuickfrozenblueberriesaretheproductpreparedfromfresh,clean,sound,ripeandstemmedblueberriesoffirmtexture,conformingtothecharacteristicsofVacciniumcorymbosumL.2,3VacciniumangustifoliumAIT.andVacciniumasheiREADE,andwhicharepackedwithorwithoutadrysugarorasugarsyrupandfrozeninanappropriatemanner.2.2ProcessDefinitionQuickfrozenblueberriesaretheproductsubjectedtoafreezingprocessinappropriateequipmentandcomplyingwiththeconditionslaiddownhereafter.Thisfreezingoperationshallbecarriedoutinsuchawaythattherangeoftemperatureofmaximumcrystallizationispassedquickly.Thequickfreezingprocessshallnotberegardedascompleteunlessanduntiltheproducttemperaturehasreached-18C(0F)atthethermalcentreafterthermalstabilization.Therecognizedpracticeofrepackingquickfrozenproductsundercontrolledconditionsispermitted.2.3HandlingPracticeTheproductshallbehandledundersuchconditionsaswillmaintainthequalityduringtransportation,storageanddistributionuptoandincludingthetimeoffinalsale.Itisrecommendedthatduringstorage,transportation,distributionandretail,theproductbehandledinaccordancewiththeprovisionsintheCodeofPracticefortheProcessingandHandlingofQuickFrozenFoods(CXC8-1976).2.4Presentation2.4.1StyleQuickfrozenblueberriesmaybepresentedasfree-flowing(i.e.asindividualberriesnotadheringtooneanother)ornonfree-flowing(i.e.asasolidblock).3.ESSENTIALCOMPOSITIONANDQUALITYFACTORS3.1OptionalIngredientsSugars(sucrose,invertsugar,invertsugarsyrup,dextrose,fructose,glucosesyrup,driedglucosesyrup).3.2Composition3.2.1BlueberriespreparedwithdrysugarsThetotalsolublesolidscontentoftheliquidextractedfromthethawed,comminutedsampleshallbenotmorethan35%m/mnorlessthan18%m/m,expressedassucrose,asdeterminedbyrefractometerat20C.3.2.2BlueberriespreparedwithsyrupTheamountofsyrupusedshallbenomorethanthatrequiredtocovertheberriesandfillthespacesbetweenthem.Thetotalsolublesolidscontentoftheliquidextractedfromthethawed,comminutedsampleshallbenotmorethan25%m/mnorlessthan15%m/mexpressedassucrose,asdeterminedbyrefractometerat20C.3.2.3DefinitionofDefectiveforCompositionAnysampleunitthatfallsoutsidethelimitsforthesolublesolidsrangespecifiedin3.2.1and3.2.2shallberegardedasadefective.1ThereappeartobemanynaturalhybridsofVacciniumcorymbosumL.andother(wild)speciesofthegenusVacciniumrenderingthetaxonomyverydifficult.2Commonname:Highbushblueberry3Commonname:Lowbushblueberry4Commonname:Rabbiteyeblueberry5VacciniummyrtillusL.CXS103-198133.2.4LotAcceptanceforCompositionAlotisconsideredacceptableforCompositionalCriteriawhenthenumberofdefectives,asdefinedin3.2.3doesnotexceedtheacceptancenumber(c)ofanappropriatesamplingplanwithanAQLof6.5,(seerelevantCodextextsonmethodsofanalysisandsampling).3.3QualityFactors3.3.1GeneralRequirementsTheproductshallbe:(a)ofsimilarvarietalcharacteristics;(b)ofgoodcolour;(c)freefromforeignflavourandodour;(d)clean,soundandpracticallyfreefrommouldandotherharmlessforeignmatter;andwithrespecttovisualdefectsorotherdefectssubjecttoatolerance,shallbe:(e)practicallyfreefromsandandgrit;(f)whenpresentedasfree-flowing,practicallyfreefromberriesadheringonetoanotherandwhichcannotbeeasilyseparatedbyhandwithoutdamagewheninthefrozenstate;(g)practicallyfreefromextraneousvegetablematerial(E.V.M.);(h)reasonablyfreefromcapstems(stalks);(i)practicallyfreefromunripeberries;(j)practicallyfreefromdissimilarvarietiesofedibleberriesotherthanblueberries;(k)reasonablyfreefromblemishedberries;(l)reasonablyfreefromundevelopedormummifiedberries.3.3.2AnalyticalRequirementsMineralimpuritiessuchassand,grit,andsiltshallbenotmorethan0.04%m/monthewholeproduct(berriesandpackingmedium,ifany).3.3.3Free-flowingcharacteristicsWhenpresentedasfree-flowingatoleranceof10%m/mshallbeallowedforberrieswhicharestucktogetherandnoteasilyseparatedinthefrozenstate.Thesampleunitforfreeflowingistheentirecontentsofthecontaineroraslargeaquantityaspracticable.3.3.4DefinitionsandtolerancesforVisualDefects3.3.4.1Definitions(a)ExtraneousVegetableMaterial(E.V.M.)meansleavesorportionsoftheblueberryplant,orothersimilarvegetablematerialwhichisharmless;(b)CapStems(Stalks)-meanstheimmediatestemthatattachestheblueberrytotheplant,whetherornotattachedtotheberry,andwhichis2mm,orgreaterinlength;(c)UnripeBerries-meanscompletelygreenberriesorberriesthathaveagreencastthatpredominatesoverthenormalreddishpurplecolourofblueberries;(d)DissimilarVarieties-meansotheredibleberriesthataredistinctlydifferentincolourorshape,whichhavedefinitelydifferentinternalcharacteristicsthanblueberries;(e)Blemished-m
