STANDARDFORMAIZE(CORN)CXS153-1985Adoptedin1985.Revisedin1995.Amendedin2019.CXS153-198521.SCOPEThisStandardappliestomaize(corn)forhumanconsumption,i.e.,readyforitsintendeduseashumanfood,presentedinpackagedformorsoldloosefromthepackagedirectlytotheconsumer.ThisStandardspecifiesrequirementsforwholegrainshelleddentmaize,ZeamaysindentataL.,and/orshelledflintmaize,ZeamaysindurataL.,ortheirhybrids.Itdoesnotapplytoprocessedmaize.2.DESCRIPTION2.1ProductdefinitionMaize(corn)istheshelledgrainsofthespeciesdefinedinthescope.3.ESSENTIALCOMPOSITIONANDQUALITYFACTORS3.1Qualityfactors–general3.1.1Maizeshallbesafeandsuitableforhumanconsumption.3.1.2Maizeshallbefreefromabnormalflavours,odoursandlivinginsects.3.1.3Maizeshallbefreefromfilthinamountswhichmayrepresentahazardtohumanhealth.3.2Qualityfactors–specific3.2.1Moisturecontent15.5%m/mmaxLowermoisturelimitsshouldberequiredforcertaindestinationsinrelationtotheclimate,durationoftransportandstorage.3.2.2Extraneousmatterareallorganicandinorganicmaterialsotherthanmaize,brokenkernels,othergrainsandfilth.3.2.2.1Filthareimpuritiesofanimalorigin(includingdeadinsects).0.1%m/mmax3.2.2.2ToxicornoxiousseedsTheproductscoveredbytheprovisionsofthisStandardshallbefreefromthefollowingtoxicornoxiousseedsinamountswhichmayrepresentahazardtohumanhealth.–Crotolaria(Crotalariaspp.),Corncockle(AgrostemmagithagoL.),Castorbean(RicinuscommunisL.),Jimsonweed(Daturassp.),andotherseedsarecommonlyrecognizedasharmfultohealth.3.2.2.3Otherorganicextraneousmatterwhichisdefinedasorganiccomponentsotherthanediblegramsofcereals(foreignseeds,stems,etc.)(1.5%m/mmax).3.2.2.4Inorganicextraneousmatterwhichisdefinedasanyinorganiccomponent(stones,dust,etc.)(0.5%m/mmax).4.CONTAMINANTS4.1HeavymetalsMaize(corn)shallbefreefromheavymetalsinamountswhichmayrepresentahazardtohumanhealth.4.2PesticideresiduesMaize(corn)shallcomplywiththosemaximumresiduelimitsestablishedbytheCodexAlimentariusCommissionforthiscommodity.4.3MycotoxinsMaize(corn)shallcomplywiththosemaximummycotoxinlimitsestablishedbytheCodexAlimentariusCommissionforthiscommodity.5.HYGIENE5.1ItisrecommendedthattheproductcoveredbytheprovisionsofthisStandardbepreparedandhandledinaccordancewiththeappropriatesectionsoftheGeneralPrinciplesofFoodHygiene(CXC1-1969)andotherCodesofPracticerecommendedbytheCodexAlimentariusCommissionwhicharerelevanttothisproduct.5.2Totheextentpossibleingoodmanufacturingpractice,theproductshallbefreefromobjectionablematter.5.3Whentestedbyappropriatemethodsofsamplingandexamination,theproduct:–shallbefreefrommicro-organismsinamountswhichmayrepresentahazardtohealth;–shallbefreefromparasiteswhichmayrepresentahazardtohealth;andCXS153-19853–shallnotcontainanysubstanceoriginatingfrommicro-organismsinamountswhichmayrepresentahazardtohealth.6.PACKAGING6.1Maize(corn)shallbepackagedincontainerswhichwillsafeguardthehygienic,nutritional,technological,andorganolepticqualitiesoftheproduct.6.2Thecontainers,includingpackagingmaterial,shallbemadeofsubstanceswhicharesafeandsuitablefortheirintendeduse.Theyshouldnotimpartanytoxicsubstanceorundesirableodourorflavourtotheproduct.6.3Whentheproductispackagedinsacks,thesemustbeclean,sturdyandstronglysewnorsealed.7.LABELLINGInadditiontotherequirementsoftheGeneralStandardfortheLabellingofPrepackagedFoods(CXS1-1985),thefollowingspecificprovisionsapply:7.1Nameoftheproduct7.1.1Thenameoftheproducttobeshownonthelabelshallbe“maize(corn)”.7.2Labellingofnon-retailcontainersInformationfornon-retailcontainersshalleitherbegivenonthecontainerorinaccompanyingdocuments,exceptthatthenameoftheproduct,lotidentificationandthenameandaddressofthemanufacturerorpackershallappearonthecontainer.However,lotidentificationandthenameandaddressofthemanufacturerorpackermaybereplacedbyanidentificationmark,providedthatsuchamarkisclearlyidentifiablewiththeaccompanyingdocuments.8.METHODSOFANALYSISANDSAMPLINGSeerelevantCodextextsonmethodsofanalysisandsampling.CXS153-19854ANNEXInthoseinstanceswheremorethanonefactorlimitand/ormethodofanalysisisgivenwestronglyrecommendthatusersspecifytheappropriatelimitandmethodofanalysis.Factor/DescriptionLimitMethodofanalysisKERNELSOFOTHERCOLOURSVisualExaminationinyellowmaize.Maizegrainswhichareyellowand/orlightredincolourareconsideredtobeyellowmaize.Maizegrainswhichareyellowanddarkredincolour,providedthedarkredcolourcoverslessthan50%ofthesurfaceofthegrain,arealsoconsideredtobeyellowmaizeMAX:5.0%byweightofmaizeofothercoloursinwhitemaize.Maizegrainswhicharewhiteand/orlightpinkincolourareconsideredtobewhitemaize.Whitemaizealsomeansmaizegrainswhicharewhiteandpinkincolour,providedthepinkcolourcoverslessthan50%ofthesurfaceofthegrainMAX:2.0%byweightofmaizeofothercoloursinredmaize.Maizegrainswhicharepinkandwhiteordarkredandyellowincolourareconsideredtoberedmaize,providedthepinkordarkredcolourcovers50%ormoreofthesurfaceofthegrainMAX:5.0%byweightofmaizeofothercoloursmixedmaizeKERNELSOFOTHERSHAPEVisualExaminationinflintmaizeMAX:5.0%byweightofmaizeofothershapesindentmaizeMAX:5.0%byweightofmaizeofothershapesflintanddentmaizeRANGE:5.
