STANDARDFORWHEATANDDURUMWHEATCXS199-1995Adoptedin1995.Amendedin2019.CXS199-199521.SCOPEThisStandardappliestowheatgrainsanddurumwheatgrainsasdefinedinSection2intendedforprocessingforhumanconsumption.Itdoesnotapplytoclubwheat(TriticumcompactumHost.),reddurumwheat,durumwheatsemolinaorproductsderivedfromwheat.2.DESCRIPTION2.1WheatisthegrainsobtainedfromvarietiesofthespeciesTriticumaestivumL.2.2DurumwheatisthegrainsobtainedfromvarietiesofthespeciesTriticumdurumDesf.3.ESSENTIALCOMPOSITIONANDQUALITYFACTORS3.1Qualityandsafetyfactors–general3.1.1Wheatanddurumwheatshallbesafeandsuitableforprocessingforhumanconsumption.3.1.2Wheatanddurumwheatshallbefreefromabnormalflavours,odours,livinginsectsandmites.3.2Qualityfactors–specific3.2.1MoisturecontentMaximumlevelWheat14.5%m/mDurumWheat14.5%m/mLowermoisturelimitsshouldberequiredforcertaindestinationsinrelationtotheclimate,durationoftransportandstorage.3.2.2ErgotSclerotiumofthefungusClavicepspurpureaMaximumlevelWheat0.05%m/mDurumWheat0.5%m/m3.2.3Extraneousmatterareallorganicandinorganicmaterialsotherthanwheatanddurumwheat,brokenkernels,othergrainsandfilth.3.2.3.1ToxicornoxiousseedsTheproductscoveredbytheprovisionsofthisStandardshallbefreefromthefollowingtoxicornoxiousseedsinamountswhichmayrepresentahazardtohumanhealth.–Crotolaria(Crotalariaspp.),Corncockle(AgrostemmagithagoL.),Castorbean(RicinuscommunisL.),Jimsonweed(Daturaspp.),andotherseedsthatarecommonlyrecognizedasharmfultohealth.3.2.3.2FilthImpuritiesofanimalorigin,(includingdeadinsects)0.1%m/mmaximum3.2.3.3OtherOrganicextraneousmatterwhichisdefinedasorganiccomponentsotherthanediblegrainsofcereals(foreignseeds,stems,etc.):MaximumlevelWheat1.5%m/mDurumWheat1.5%m/m3.2.3.4Inorganicextraneousmatterwhichisdefinedasanyinorganiccomponent(stones,dust,etc.):MaximumlevelWheat0.05%m/mDurumWheat0.05%m/mCXS199-199534.CONTAMINANTS4.1HeavymetalsTheproductscoveredbytheprovisionsofthisStandardshallbefreefromheavymetalsinamountswhichmayrepresentahazardtohumanhealth.4.2PesticideresiduesWheatanddurumwheatshallcomplywiththosemaximumresiduelimitsestablishedbytheCodexAlimentariusCommissionforthiscommodity.5.HYGIENE5.1ItisrecommendedthattheproductcoveredbytheprovisionsofthisStandardbepreparedandhandledinaccordancewiththeappropriatesectionsoftheGeneralPrinciplesofFoodHygiene(CXC1-1969),andotherCodesofPracticerecommendedbytheCodexAlimentariusCommissionwhicharerelevanttothisproduct.5.2Totheextentpossibleingoodmanufacturingpractice,thecleanedproductshallbefreefromobjectionablematter.5.3Whentestedbyappropriatemethodsofsamplingandexamination,theproduct,aftercleaningandsorting,andbeforefurtherprocessing:–shallbefreefrommicro-organismsinamountswhichmayrepresentahazardtohealth;–shallbefreefromparasiteswhichmayrepresentahazardtohealth;and–shallnotcontainanysubstanceoriginatingfrommicro-organisms,includingfungi,inamountswhichmayrepresentahazardtohealth.6.PACKAGING6.1Wheatanddurumwheatshallbepackagedincontainerswhichwillsafeguardthehygienic,nutritional,technological,andorganolepticqualitiesoftheproduct.6.2Thecontainers,includingpackagingmaterial,shallbemadeofsubstanceswhicharesafeandsuitablefortheirintendeduse.Theyshouldnotimpartanytoxicsubstanceorundesirableodourorflavourtotheproduct.6.3Whentheproductispackagedinsacks,thesemustbeclean,sturdy,andstronglysewnorsealed.7.LABELLINGInadditiontotherequirementsoftheGeneralStandardfortheLabellingofPrepackagedFoods(CXS1-1985),thefollowingspecificprovisionsapply:7.1NameoftheproductThenameoftheproducttobeshownonthelabelshallbe“wheat”or“durumwheat”asapplicable.7.2Labellingofnon-retailcontainersInformationfornon-retailcontainersshallbegiveneitheronthecontainerorinaccompanyingdocuments,exceptthatthenameoftheproduct,lotidentificationandthenameandaddressofthemanufacturerorpackershallappearonthecontainer.However,lotidentificationandthenameandaddressofthemanufacturerorpackermaybereplacedbyanidentificationmark,providedthatsuchamarkisclearlyidentifiablewiththeaccompanyingdocuments.8.METHODSOFANALYSISANDSAMPLINGSeerelevantCodextextsonmethodsofanalysisandsampling.CXS199-19954ANNEXInthoseinstanceswheremorethanonefactorlimitand/ormethodofanalysisisgivenitisstronglyrecommendedthatusersspecifytheappropriatelimitandmethodofanalysis.Factor/DescriptionLimitMethodofanalysisWheatDurumWheat1.Minimumtestweight:theweightofahundredlitrevolumeexpressedinkilogramsperhectolitre.6870ThetestweightshallbetheweightperISO7971-1986expressedinkilogramsperhectolitreasdeterminedonatestportionoftheoriginalsample.2.Shrunkenandbrokenkernels:brokenorshrunkenwheatordurumwheatwhichwillpassthrougha1.7mmx20oblong-holedmetalsieveforwheatandthrougha1.9mmx20oblong-holedmetalsievefordurumwheat.5.0%m/mmax6.0%m/mmaxISO5223-1983“Testsievesforcereals”.3.EdibleGrainsotherthanwheatanddurumwheat(wholeoridentifiablybroken)2.0%m/mmax3.0%m/mmaxISO7970-1987:(AnnexC)4.Damagedkernels(includingpiecesofkernelsthatshowvisibledeteriorationduetomoisture,weather,disease,mould,heating,fermentation,sprouting,orothercauses.)6.0%m/mmax4.0%m/mmaxISO7970-1987:(AnnexC)5.Insectboredkernel
